Easy Homemade Pickled Onions

A quick trip through Panera for a panini sandwich turned out to be life changing! Well, at least in the culinary sense. I happened upon this delicious little sandwich that was made even better by the pickled onions that topped it, and I was hooked on the flavor. I immediately had to try making my own at home and it was so easy that they are now a permanent condiment on all of our sandwiches, salads, and we have been known to snack on them right out of the jar! Here’s how to make your own Easy Homemade Pickled Onions!

These onions are amazing on hot and cold sandwiches, over a nice leaf lettuce salad, diced on burgers, or in a pasta salad( like this delicious Italian pasta salad).

When I first decided to make my own homemade pickled onions, I thought it’d be difficult, or that I’d have to wait ages before eating them! But actually, pickling isn’t difficult at all! Once you make these tasty pickled onions, you’ll want to pickle all sorts of things!

Easy Homemade Pickled Onions

Ingredients

1 large red onion
1 cup apple cider vinegar
½ cup water
1 Tablespoon sugar
1 teaspoon coarse sea salt
2 teaspoons black peppercorns

Large Mason jar (a glass container is best to protect the flavor)

Directions

1. Cut the ends off your onion and peel off the outer skin.
2. Cut onion in half and then slice into very thin pieces.

Microwave the vinegar and water for 1 minute, stir in sugar and salt until dissolved.
4. Pour mixture into Mason jar and add black peppercorns.

Drop your sliced onions into the jar, filling it to the top (be careful not to overfill!).
6. Allow mixture to sit uncovered until it has reached room temperature.

Replace lid and store in the refrigerator. Allow onions to sit for at least 24 hours before sampling so that the flavors of your pickled onions have a chance to combine well.

These homemade pickled onions can last for several weeks in the fridge. The onions may turn pink over time, and that’s normal. It’s just the result of the pickling.
