When I am out and about, I love to hit up Starbucks and grab a drink and a snack. They have some fantastic treats and pastries as well as coffee. Not going to lie though, the prices are pretty expensive, and it’s hard to justify spending that much on a snack. I feel like if I can make something at home, I might as well! Not only do you save money when you make food yourself, most of the time it tastes better too. My delicious Starbucks Pumpkin Bread Copycat Recipe is way better and very inexpensive!

I love how delightful this bread looks! But, the best part isn’t the look. It’s how moist, soft, and flavorful it is. Eat a piece (or two, I’m not judging) with a hot cup of coffee or some tea. There won’t be a crumb left over.
Starbucks Pumpkin Bread Copycat Recipe
Yields 1 9×5″ Loaf
Ingredients
Bread Ingredients
3 eggs
1 1/2 cups pumpkin puree
2/3 cup sunflower oil
1 cup granulated sugar
1/4 cup brown sugar
2 tsp. vanilla extract
1 1/2 cups all-purpose flour
2 tsp. pumpkin pie spice
1 tsp. baking soda
3/4 tsp. baking powder
1/2 tsp. salt
Candied Pepita Topping Ingredients
1/3 cup pepitas or pumpkin seeds
1 tsp. clover honey
1/4 tsp. sunflower oil
9 x 5″ loaf pan
Directions
1. Preheat oven to 350 degrees F and spray a 9×5″ loaf pan with non-stick cooking spray.
2. Wrap outside of pan with foil.
3. Whisk eggs in a medium-sized bowl.
4. Stir in pumpkin, oil, sugars, and vanilla extract and mix until smooth.
5. Stir in flour, pumpkin pie spice, baking soda, baking powder, and salt and mix until combined.
6. For the topping, combine pumpkin seeds, honey, and oil, and stir.
7. Place in microwave for 10 to 15 seconds and set aside.
8. Pour batter into prepared pan, smooth, and sprinkle pumpkin seed topping over the top.
9. Bake until cooked through, about 55 to 65 minutes.
10. Cool for at least 15 minutes before transferring to a cooling rack and cool completely before slicing. Enjoy!
