I love peanut butter! I don’t care if it’s on it’s own or together with jelly, I just love the nutty, salty taste of it. So of course I love peanut butter cups. If you want to make healthy and inexpensive peanut butter cups at home, then you need to make my Easy Peanut Butter Bites!

Have you ever noticed how “peanut butter cups” usually refers to a mixture of chocolate and peanut butter? Well these are pure peanut butter cups- just peanut butter, no chocolate. I actually came up with the idea for them the other day when I was searching for healthy peanut butter cups at the store. I wound up not buying any, partly because the prices were crazy, and partly because “healthy” seems to usually mean dark chocolate, and I’m unfortunately not a dark chocolate fan. So my solution was simply to make my own peanut butter cups, and skip the chocolate all together! The end result is healthy, and so, so tasty! Plus, they’re really inexpensive to make! Even if you use organic ingredients, it’ll cost you less than those pricey ones at the grocery store!
Easy Peanut Butter Bites
Don’t like peanuts? You can always swap them out for a different nut/nut butter. If you have peanut/tree nut allergies Sunbutter might be a good alternative.
Ingredients
2 cups peanut butter (I used a creamy variety)
1/4 cup coconut oil
1/4 cup maple syrup
1/2 cup peanuts, chopped (optional)
Sea salt
Directions
1. Place peanut butter, coconut oil, and maple syrup in a saucepan.
2. Heat over medium heat until melted.
3. Whisk mixture until smooth.
4. Pour peanut butter mixture into a cupcake pan that has been lined with baking cups.
5. Chop peanuts and sprinkle on top of peanut butter mixture (optional).
6. Chill 2 hours or until firm.
7. Remove from fridge and sprinkle with sea salt.
8. Then enjoy! Store in an airtight container in the fridge for a couple of days or in the freezer if you want to keep them for longer.
