The start of a new year can be a busy time. The kid’s are back in school again, the house needs straightening up from the holidays, and it’s likely that you’re working on a resolution or two! As a result, you may have some days when you feel you’re too busy (or too tired) to make dinner. But eating out often isn’t good for your health or your budget, so instead, why not make a quick 30-min meal! This One Pot Sausage Pasta is a complete dinner made in half an hour in just one pan!

I love one pot dishes like this one pot sausage pasta because clean-up is so fast! There’s not a pot for the noodles, a pan for the sausage, and a baking dish for the broccoli. There’s just one pan and a small cutting board! Which means that not only can I make dinner fast, but I can also clean up fast afterwards and quickly get back to whatever I was working on!
One Pot Sausage Pasta
Ingredients
1 ½ teaspoons oil
1/6 cup of onions, chopped
2 cloves garlic, minced
2 tablespoons tomato paste
1 14.4oz can petite diced tomatoes
1 teaspoon salt (or to taste)
1 teaspoon herbs de Provence (you can substitute Italian seasoning if you don’t have it)
½ teaspoon of ground black pepper
14oz Polska kielbasa or favorite cooked sausage, sliced into bite size pieces
14.5oz beef stock
1- 1 ½ cups of water
12oz frozen broccoli cuts
12oz penne pasta
mozzarella cheese for garnish
Directions
1. In a pot or large deep pan, add oil over medium-high heat. Once heated, add in onions and garlic, saute for two minutes.
2. Lower heat to medium. Add in sausage, tomato paste, diced tomatoes, salt, herbs de Provence, black pepper, sausage, beef stock, and water. Stir well to distribute the ingredients.
3. Add in broccoli and pasta, return heat to high. Once sauce begins to bubble, lower to a simmer. Cover pan and cook for 12-15, stirring occasionally, until pasta is al dente.
4. Garnish with mozzarella cheese and serve your one pot sausage pasta! Enjoy!
