You guys know I love to bake desserts from scratch, but sometimes after spending time in the summer heat, I just don’t have the energy! That’s where a box of cake mix comes in handy. It lets me bake something, but not spend ages putting it together. On top of that, cake mix is really versatile! If you’ve just been making cake and cupcakes with it, then you’re missing out. Donut pans are something else that are pretty versatile. While I’ve used my donut pans to do what it was made for and bake homemade donuts, you can also use them to make other round treats. Like these watermelon cake donuts!
I love how fun and seasonal these donuts look! If you have kids, don’t hesitate to ask them to help with icing and topping the donuts!
Watermelon Cake Donuts
Ingredients
White cake mix (usually calls for oil, eggs, and water)
Tub of vanilla frosting
Pink and green liquid gel food coloring
Miniature chocolate chips
Non-stick cooking spray
Freezer bag
Silicone donut mold
Parchment paper
Directions
1. Preheat your oven to 350 degrees and grease your baking mold with a non-stick cooking spray.
2. Mix your cake mix with your oil, eggs, and water.
3. Mix in a few drop of green food coloring until you reach your desired green color.
4. Carefully pour your batter into a large freezer bag and cut a small corner off the bottom of one side.
5. Use your bag to fill your donut molds almost to the top with your green batter.
6. Bake for 15 minutes, let cool, and carefully remove each green cake donut.
7. Scoop your frosting into a microwavable bowl, mix in a couple drops of pink food coloring, and microwave for 15 seconds.
8. Stir your frosting. Dip the top of each donut into the liquified pink frosting and place onto a piece of parchment paper.
9. Sprinkle miniature chocolate chips on top, let set for 15 minutes, then enjoy your watermelon cake donuts!
