Ramen noodles have an unfairly bad reputation. People see them as an unhealthy quick meal made by college students and people who don’t know how to cook. But actually, ramen noodles are like any other noodle. So they can be used to make delicious, healthy meals! If you need a fast lunch or dinner, pull out the ramen and make this Quick and Easy Ramen Vegetable Stir Fry!

If ramen noodles themselves aren’t unhealthy, you may wonder what has given ramen such a bad reputation. It’s the seasoning packet! So by leaving that out this dish actually becomes pretty nutritious! You can even find gluten-free organic ramen noodles if you want a super healthy dish!

This is one of my go-to favorites for a quick homemade weekend lunch for my kids. It keeps them full until dinner, and it saves me money because we don’t have to get something out.

If you have a big family to feed, or just a hungry teenager, you can add another 1 or 2 ramen noodle packages and more eggs. Also feel free to add in any leftover cooked chicken you might have!

Quick + Easy Ramen Vegetable Stir Fry

Ingredients

2 packages of ramen noodles, discard the seasoning packets
1 cup frozen peas and carrots
4 green onions, diced
2 eggs
Soy sauce to taste (you could substitute tamari sauce, liquid aminos, or coconut aminos)
Sesame oil (you can substitute canola oil)
Salt and pepper to taste

Directions

1. Cook the 2 packages of ramen noodles according to package directions. Once the ramen noodles are cooked, drain and rinse with cool water to stop them cooking and set aside.

2. Pour a little cooking oil into a large pan and sauté the frozen peas and carrots and the green onions until tender, about 10 minutes.

3. In a separate pan, scramble the eggs.

4. Add the scrambled eggs and ramen noodles to the large saucepan.

5. Add soy sauce and continue to heat through for another 5 minutes. Add salt and pepper to taste (extra salt may be necessary if you used low-sodium soy sauce or any of the soy sauce substitutes).
