Pineapple, Orange, and Bing Cherry Pops

I can’t believe it’s already August! I know the stores are already into fall/Halloween (and I even saw a bunch of Christmas stuff at Hobby Lobby), but outside it still feels like the middle of summer. With all the hot days we’ve been having, I’ve been making a lot of homemade ice cream and homemade ice pops. In order to keep things fresh and new, I decided to come up with a new ice pop recipe. And since so many tasty fruits are in season right now, I chose to use one of my favorites- cherries! Here’s how I made these refreshing Pineapple, Orange, and Bing Cherry Pops!

Bing cherries are just the usual red, sweet cherries you see at the grocery store. Every summer, I wait for them to come into season, and then spend my summer snacking on them! They’re so good! Which is why I left them as halves in this recipe. I could have blended up the mixture and made them into a puree, but they’re so tasty that I really prefer just leaving the chewable halves!

Pineapple, Orange, and Bing Cherry Pops

Makes 4-6 ice pops (depending on size of molds)

Ingredients

16 Bing cherries – pitted and halved (a cherry pitter makes this go fast!)
8 Tablespoons (1/2 cup) crushed pineapple
3/4 cup pineapple juice
1/2 cup orange juice

Ice pop molds

Directions

1. In a large glass or pitcher, mix together the pineapple and orange juices. Set aside.

Drop 3-4 cherry halves into the bottom of each ice pop mold.
3. Place 2 tablespoons of crushed pineapple into each mold.
4. Add 3-4 more cherry halves on top of the crushed pineapple.

Pour the pineapple and orange juice mixture into each mold, up to the fill line.

Freeze overnight or for at least 6 hours.

Ingredients

Scale
  • 16 Bing cherries – pitted and halved (a cherry pitter makes this go fast!)
