Mini Lemon Berry Cheesecake In A Jar

Serve this delicious No-Bake Lemon Berry Cheesecake in a cute little mason jar for a  perfect spring and summer dessert! A tasty way to use sweet berries in a dessert that ends any meal on a good note.  Layered with graham cracker crust, creamy cheesecake with a hint of lemon, and an amazing berry puree. This will be a family favorite, especially during the warm months. Make sure you dig all the way down to the bottom with each bite so you get a taste of each layer for maximum flavor!

No Bake Mini Lemon Berry Cheesecake

These individual cheesecakes require no baking so they’re quick to put together and look so cute! Great for parties!

Lemon Berry Cheesecake Recipe

Ingredients:

Cheesecake:

2- 8 oz. blocks cream cheese, softened

¼ cup granulated sugar

1-14 oz. can sweet condensed milk

2 Tbsp.  lemon juice

4 oz mason jar (4)

Fruit Topping:

1 cup frozen mixed berries

1 Tbsp. granulated sugar

2- 3 Tbsp. milk

Crust:

1 ½ sleeves graham crackers

10 Tbsp. unsalted butter, melted

2 Tbsp. granulated sugar

How to make lemon berry cheesecake in a jar

Directions:

1. Finely crush or puree graham cracker into crumbs.

2. Mix in the granulated sugar and melted butter.

3. Divide up crust evenly into 4  (4 oz) mason jars, press down firmly with a spoon.

4. To make the cheesecake – in the bowl of a hand or stand mixer combine the room temperature cream cheese, sugar, condensed milk, and lemon juice until creamy and smooth.

5. Divide cheesecake among your jars.

6. Place frozen berries, sugar, and just enough milk to help it mix smoothly in your blender or food processor and blend until smooth.

7. Pour fruit puree on top of cheesecake.

8. Replace lids and rings, allow to sit in refrigerator until chilled.

Easy no bake mini lemon berry cheesecake make in a jar
