Italian Cheesy Chicken Pasta One Pot Meal

We love fast meals in our house! Between taking care of the kids, taking care of the house, and doing all that I have to do every day, I don’t always have the time (or energy!) to make a 45 min+ meal! And I definitely don’t have the desire to clean up after that kind of meal, either! So I’m always trying to come up with meals that are tasty, but fast and easy to clean up. That’s why this is one of my favorite kinds of recipes! All you need is one pot and about 30 minutes or less to make this Italian Cheesy Chicken Pasta One Pot Meal!

Another reason I like this cheesy chicken pasta one pot meal is that it’s really frugal! It doesn’t take a lot of ingredients to make, and it makes a lot! This recipe made enough for my family of four to have for dinner, and my husband and I were able to have the leftovers for lunch the following day! And it was just as good (if not even better) the next day!

Italian Cheesy Chicken Pasta One Pot Meal

Serves 6-8

Ingredients

3 chicken breasts, cut into cubes
1 can Italian style stewed tomatoes, 14.5 oz
salt and pepper
3/4 tsp garlic powder
1 tsp onion powder
24 ounces pasta sauce
3 cups water
16 ounces rotini pasta, uncooked
2 tsp Italian seasoning (I used my homemade Italian seasoning)
1/2 tsp parsley
1/2 tsp crushed red pepper flakes (optional)
1/2 cup mozzarella cheese, shredded
1/2 cup Parmesan cheese, shredded
fresh basil for garnish (optional)

Directions

1. In a large stock pot, add chicken and half of the can of stewed tomatoes. Heat on medium high until chicken is no longer pink. Season with salt, pepper, garlic powder, and onion powder.

Add pasta sauce, water, and rotini pasta to pan and bring to a boil. Season with Italian seasoning and parsley. Add the red pepper flakes if you want to add a touch of spicy heat to your sauce. Reduce heat to simmer and cover for 15 minutes or until pasta is cooked.

This Italian cheesy chicken pasta one pot meal is quick and easy to put together, and quick to clean up, too!


Ingredients
