Can you ever get too much comfort food? Whenever you have been sick, feeling down, or are in the mood for something homemade, comfort food is to the rescue. If you are like most of us, you grew up on mac and cheese and are more than happy to eat it as an adult. Whenever I make it for the kids, they pretty much don’t even talk while they are busy eating. This homemade baked mac and cheese is so good that you can literally eat it all by itself. No main course required! Whenever someone has a new baby, moves into the area, or has had a funeral, I like to bring them some food. My baked mac & cheese is my most requested dish, and I am happy to make it. I double the batch, keep one for home, and deliver the other.
The Best Homemade Baked Mac And Cheese
Ingredients
8oz shredded cheddar cheese
8oz shredded Monterey Jack cheese
1 1/2 cups cooked elbow macaroni
5 Tablespoons butter
3 Tablespoons all-purpose flour
2 cups whole milk
1 teaspoon salt
1 teaspoon pepper
Directions
1. Preheat oven to 350 degrees.
2. In a large skillet, melt 3 Tablespoons of butter.
3. Add the flour and stir over medium heat until the mixture is lightly browned
4. Add the milk and whisk.
5. Add the salt and pepper and cook over medium heat until the sauce thickens and starts to bubble.
6. Slowly stir in both kinds of cheese (save a little cheese to sprinkle later) and the last 2 Tablespoons of butter and whisk until smooth and melted.
7. Add the noodles once the cheeses have melted and mix well.
8. Pour into a baking dish.
9. Sprinkle the remaining cheese on top and bake for 20 minutes or until golden brown. Serve and enjoy!
