Apple Butter Coffee Cake

I love having an afternoon treat! There’s nothing better than a little sugary something to help pick me up when I start getting tired in the afternoon. I like the treat even better if it complements a hot cup of coffee! If you’re looking for a yummy afternoon treat, you’ve got to make this Apple Butter Coffee Cake!

This recipe is a great place to use my homemade apple butter! You could also use store-bought apple butter, but I think homemade is so much more flavorful (and you know exactly what’s in it)!

Apple Butter Coffee Cake

Ingredients

Cake
1 cup softened butter
3/4 cup brown sugar
3/4 cup white sugar
4 eggs
1 1/2 teaspoons baking powder
1 teaspoon salt
3 cups flour
2 cups apple butter (I used my homemade slow cooker apple butter)

Topping
1/2 cup flour
1/2 cup quick oats
1 teaspoon cinnamon
1/3 cup brown sugar
1 teaspoon vanilla
1 teaspoon cinnamon
1/8 teaspoon salt
1/4 cup melted butter

Icing
1/2 cup powdered sugar
1 tablespoon water

Directions

1. Grease two 9″ round pans (my pans have removable bottoms).

Apple butter coffee cakeApple butter coffee cake2. Beat the brown sugar, white sugar, and softened butter together until creamy. Add the eggs, beat further. In a separate bowl, mix together the baking powder, salt, and flour. Add the baking powder mixture to the butter mixture and stir until a soft dough forms.

Apple butter coffee cake3. Spread out the dough into your two pans. Pour your apple butter on top of both pans of dough and spread it evenly.

Apple butter coffee cake4. Mix together the topping ingredients. Sprinkle the topping on top of the apple butter.
5. Bake at 350 degrees for 28-32 minutes.
6. Let both cakes cool.
7. Stack one cake on top of the other.

Apple butter coffee cake8. Mix together the icing. You can either drizzle it onto the cake straight from the bowl, or use an icing bag (you can easily make one from a sandwich bag with a corner cut off).

Note: If you’d rather only use one pan, you could use a 9×13″ pan instead, and bake your cake for 22-28 minutes.
