Drool-worthy Salted Caramel Cookie Bars.
I am a massive lover of all things that have chocolate and caramel. The combination of the two makes my heart skip a beat when I think of them. Cookie bars are some of my favorites because you get the enjoyment of cookies, but you don’t have to spend time baking a batch, letting them cool, baking another batch, etc. That can be very time consuming, and sometimes I want to work on other things while my oven does the work for me. So I am very excited to share these Delectable Salted Caramel Cookie Bars with you!

I think you will love how versatile these caramel cookies are. You can make adjustments to them, depending on your preferences. For example, we used walnuts, but you could easily use a different nut like pecans, hazelnuts, or almonds. Or you could skip them altogether. Sometimes when I am wanting to make something extra special, I will swap a portion of the chocolate chips for peanut butter or butterscotch chips. It’s incredible, and you aren’t going to end up with a crumb left because everyone is going to go wild for them. No matter how you make them, you will find that they are a scrumptious and easy dessert that is perfect for a crowd.
Delectable Salted Caramel Cookie Bars
Yield – 16 – 20 Cookie Bars
Ingredients
3 cups all-purpose flour
¼ teaspoon salt
1 teaspoon baking soda
2 sticks butter (unsalted)
2 teaspoons vanilla extract
1 ¼ cup brown sugar
½ cup white sugar
2 large eggs
1 ½ cups semi-sweet chocolate chips
½ cup walnuts, chopped
Jar of caramel sauce
Coarse salt (optional, to taste)
Directions
1. Preheat the oven to 350 degrees. Line 9 x 13″ baking dish with parchment paper and spray with nonstick cooking spray.
2. In a medium-sized bowl, combine flour, salt, and baking soda together and set aside.
3. Beat the butter, vanilla, brown sugar, and white sugar in a bowl with a wooden spoon. You can also use an electric mixer if you want.
4. Add eggs and combine well.
5. Pour in flour mixture slowly. The cookie dough will be crumbly.
6. Fold in ½ the chocolate chips and ½ of the walnuts.
7. Press half of the cookie dough into the pan. Use the back of a measuring cup or your hands to press it down.
8. Drizzle ½ of the jar of caramel on the cookie dough.
9. Add the rest of the cookie dough. Press down using the back of a spoon or your fingers.
10. Drizzle some more caramel on top and add the rest of the chocolate chips and walnuts. Sprinkle with coarse salt to taste. Save some caramel for after they come out of the oven.
11. Bake for 25-30 minutes. It’s done when the cookies are golden brown, and you can insert a toothpick, and it comes out clean.
12. Place the cookie bars on a wire rack to cool for 1 hour. Drizzle with the rest of the caramel, serve, and enjoy!
