Have you ever made something other than cake using a boxed cake mix? If you haven’t, you’re missing out! Cake mix desserts are quick, easy, and delicious! We don’t like to use cake mix too often (usually opting to make our own homemade cake), but sometimes we just like the convenience of a box cake mix! Especially if we can use the mix in a tasty no-bake recipe like in this No-Bake Rainbow Bites Dessert!

These are so easy to whip up that they make perfect party desserts! They also can be made as an easy after-school snack, or just an easy dinnertime dessert! You’ll find it’s not hard coming up with an excuse to make these yummy rainbow bites!
Consider yourself a M&Ms connoisseur? Feel free to use your favorite variety of M&Ms in this recipe! I just used the regular milk chocolate ones, but these no-bake rainbow bites would also be just as tasty with one of the other M&M flavors!
No-Bake Rainbow Bites Dessert
Ingredients
1 box white cake mix (15-16 ozs)
1/2 cup + 2 Tablespoons butter
1/2 cup M&Ms (any flavor)
1 cup rainbow sprinkles, divided (I used rainbow nonpareils, the tiny ball type of sprinkles)
Directions
1. Melt butter in a microwave safe dish.
2. Add melted butter to cake mix and stir well.
3. Stir 1/2 cup of rainbow sprinkles into the mix.
4. Roll the dough into balls, then flatten with the palm of your hand. Add 3 M&Ms to each flattened ball, then fold up the sides of the dough around the candies. The dough does not have to cover the candies. Roll the dough with your palms again, and it will close up around the M&Ms.
5. Dip each ball in the remaining sprinkles and set aside to firm up. Place in the refrigerator until ready to serve.
