It’s grilling season! I got my husband a Char-Broil Gas2Coal grill for Father’s Day, and he’s loving it (and no, this isn’t a sponsored post)! He’s made so many yummy grilled dinners the last few weeks, including some delicious grilled chicken! We can’t eat a whole chicken in one meal so there’s always leftovers. I considered freezing the excess for later, but then I thought why not use it to make a quick, delicious salad! If you have any extra grilled chicken on hand, you have to make my Strawberry Mango Grilled Chicken Salad!

I love grilled chicken just as much as I love salads with fruit in them- and that is to say I love them a lot! So by combining the two I’ve essentially created my favorite salad ever! Top it with my homemade honey lemon vinaigrette and you’ve got a light, healthy, and wonderfully flavorful summer salad.
Of course, you don’t have to use home-grilled chicken to make your strawberry mango grilled chicken salad. This would be equally quick to make using a rotisserie chicken from the grocery store. And you can definitely swap out my vinaigrette for your favorite salad dressing. But I suggest you give it a try. Homemade dressing is so easy to mix up, and this vinaigrette tastes so good mixed with the other ingredients!
Strawberry Mango Grilled Chicken Salad
Honey Lemon Vinaigrette
Whisk together 3 Tbsp. of olive oil, 1 Tbsp. of honey, 1 tsp of lemon juice, 1 tsp of red wine vinegar, 1/2 tsp of lemon zest, 1 tsp of chopped thyme, salt (to taste) and freshly cracked black pepper (to taste) and set aside. I like to keep mine in a salad dressing shaker, so I can easily shake it up to re-mix the ingredients if they settle.
Salad Ingredients
3 cups of spinach + arugula (or spring mix)
1 cup of grilled chicken cut into strips or cubes
1 mango, cubed
7-8 plump strawberries, sliced
1/4 cup of chopped roasted almonds
Salad Directions
1. Rinse your greens and chop your ingredients.
2. Toss the greens, chicken, mango cubes, strawberries, and almonds together.
3. Drizzle the honey-lemon vinaigrette on top, or serve it without dressing and place the vinaigrette on the table for people to use as much as they prefer. Enjoy your strawberry mango grilled chicken salad!
