Delicious Homemade Peppermint Fudge
Ingredients
Chocolate Layer
2 cups semi-sweet chocolate chips
14 ounce can sweetened condensed milk
2 teaspoon vanilla extract
Peppermint Layer
2 cups pink melting chocolate (or white chocolate chips)
14 ounce can sweetened condensed milk
½ teaspoon peppermint extract
1 teaspoon vanilla extract
Topping (optional)
Crushed candy canes (crush full size candy canes yourself, or use pre-crushed ones)
Mini chocolate chips
Directions
1. Begin by preparing the chocolate layer. Combine the chocolate chips and sweetened condensed milk in a microwave-safe bowl. Heat in the microwave for 30 seconds. Stir and repeat. When the chocolate chips are almost melted, keep stirring them so they finish melting. You don’t want to overheat the mixture.
2. Add in the vanilla and stir. Pour into an 8×8 inch pan that has been lined with parchment paper.
3. Combine the pink melting chocolate along with the sweetened condensed milk in a microwave-safe bowl. Heat for 30 seconds in the microwave and stir. Continue the process until chocolate is almost entirely melted, then keep stirring.
4. Once melted, add in the peppermint extract and vanilla and mix again. Pour over chocolate layer.
5. Sprinkle crushed candy canes and mini chocolate chips on top. Let the fudge set up for 3-6 hours at room temperature or 2-3 hours in the fridge.
6. Remove from the pan, and slice into cubes to serve.
Then enjoy your delicious homemade peppermint fudge!
Notes/Tips/Variations
- The semi-sweet chocolate layer will be pretty thick. This is totally normal.
- The pink layer is going to be fairly thin and runny but will set up as it sits.
- Feel free to swap out the pink candy melts for any other color or simply use white chocolate chips.
- You can add chopped candy can to the fudge mixture if you want.
