Whenever we have too many ripe bananas, I bake banana bread! I love it because it tastes delicious, is a frugal way to keep bananas from going to waste, and because I don’t have to add a lot of sugar (thanks to the sweet ripe/over-ripe bananas). The other day, I decided to take my frugal baking one step further and turn my homemade banana bread into some delicious parfaits. Here’s how to make your own Banana Bread Parfaits, plus I’m going to share my Homemade Banana Bread Recipe!

I think banana bread should count as a serving or two of fruit! After all, a lot of bananas go into making good banana bread! You really won’t want to skimp on the bananas in this recipe. It’ll turn out fine with less, but the more your have, the stronger the tasty banana flavor. Of course, if you’re in a pinch you could add some imitation banana extract to try to make up for having too few bananas. It’s “technically” cheating, but I won’t tell!
Banana Bread Parfaits + Homemade Banana Bread Recipe
Makes 4 small trifles.
Banana Bread Recipe:
1 cup all-purpose flour
1 cup wheat flour
1-1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
5 tablespoons butter, softened
1/4 cup milk
5 ripe bananas, mashed (I used a potato masher to make this easy)
1/2 cup sugar
Filling:
1 small box instant pudding (I used the French vanilla flavor, but banana cream would probably also be good!)
2 cups milk
Whipped topping
1/4 cup finely chopped nuts (walnuts, pecans or hazelnuts)
Bread Directions:
1. Preheat oven to 350. Grease and flour a loaf pan. Set aside.
2. Add flours, baking powder, baking soda and salt into a small mixing bowl and mix well. Set aside.
3. In a separate mixing bowl, beat eggs, butter, milk, bananas and sugar until smooth. Stir in dry ingredients and beat just until blended.
4. Pour batter into prepared pan and bake for 50-60 minutes or until toothpick inserted in the center comes out clean.
5. Let cool before slicing.
Parfait Directions:
1. Add pudding and milk together in a bowl and whisk until smooth (I used a milk frother). Refrigerate for 5 minutes until set. Remove from the refrigerator and stir.
2. Slice bread into 1/2″ slices and cut those slices into 1/2″ cubes. Place a handful of bread cubes into a small trifle bowl and top with about 3 scoops of pudding. Place another handful of bread cubes on the top.
3. Add whipped topping and crushed nuts to the top before serving. Enjoy!
