Banana Bread Parfaits + Homemade Banana Bread Recipe

  • –Banana Bread– 1 cup all-purpose flour
  • 1 cup wheat flour
  • 11/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 5 tablespoons butter, softened
  • 1/4 cup milk
  • 5 ripe bananas, mashed (I used a potato masher to make this easy)
  • 1/2 cup sugar
  • –Parfaits– 1 small box instant pudding (I used the French vanilla flavor, but banana cream would probably also be good!)
  • 2 cups milk
  • Whipped topping
  • 1/4 cup finely chopped nuts (walnuts, pecans or hazelnuts)

Instructions

  1. –Banana Bread– Preheat oven to 350. Grease and flour a loaf pan. Set aside.
  2. Add flours, baking powder, baking soda and salt into a small mixing bowl and mix well. Set aside.
  3. In a separate mixing bowl, beat eggs, butter, milk, bananas and sugar until smooth. Stir in dry ingredients and beat just until blended.
  4. Pour batter into prepared pan and bake for 50-60 minutes or until toothpick inserted in the center comes out clean.
  5. Let cool before slicing.
  6. –Parfaits– Add pudding and milk together in a bowl and whisk until smooth (I used a milk frother). Refrigerate for 5 minutes until set. Remove from the refrigerator and stir.
  7. Slice bread into 1/2″ slices and cut those slices into 1/2″ cubes. Place a handful of bread cubes into a small trifle bowl and top with about 3 scoops of pudding. Place another handful of bread cubes on the top.
  8. Add whipped topping and crushed nuts to the top before serving. Enjoy!
