My husband is the pancake maker in the family and apple cinnamon pancakes are my favorite! He always makes me apple cinnamon and reserves some batter for our daughter and puts chocolate chips in hers (she doesn’t like cooked apples). While these pancakes have a definite fall flavor they are delicious anytime of year. Soft with lightly crisped edges (the secret of the edges is to use butter to grease your hot pan) you will find they quickly disappear off the plate!

Making pancakes from scratch is really easy (and a fraction of the price of boxed mix) but you could of course use a mix and just add the apples and cinnamon. 🙂
Melt In Your Mouth Apple Cinnamon Pancakes
Ingredients:
1 medium apple
1 tsp. apple pie spice
1 tsp. cinnamon
1 cup plus 2 Tbsp. All Purpose flour
2 tsp. baking powder
3 Tbsp. Brown Sugar
1 egg
1 cup milk
2 Tbsp. canola oil
pinch of salt
Directions:
1. Peel and dice apple finely.
2. Whisk milk, oil, and egg together well.
3. Stir in flour, baking powder, sugar, cinnamon, apple pie spice and salt until well combined.
4. Fold in diced apples.
5. Place butter in a large skillet or on a griddle over medium low heat.
6. Scoop about a 1/4 cup of batter into hot pan and cook until air bubbles are popping in the batter and edges are becoming lightly browned- this is roughly two minutes.
7. Flip and cook on the other side for 1-2 minutes.
8. If desired top with additional diced apples (fried or uncooked) and a sprinkle of cinnamon.
Makes about 8-10 pancakes.
Warm your syrup before serving for a special touch!

My husband is the pancake maker in our house, too-almost every Sunday. Whole wheat with blueberries=my favorite.
I do the waffles and French toast, but have seldom made pancakes. And when I make waffles, it’s usually for dinner.
It works for us because he’s a morning person and I am NOT. 😉

I use the Easy Recipe plug-in. I decided that since I’m going to be doing more recipes that it would be easier for people to print out instead of having to cut and paste into Word or whatever.
