Fall French Toast Sticks Made with Pumpkin.
I love French toast sticks! Plain French toast is always fine of course, but for some reason it becomes even more fun to eat when cut into sticks. And not only are these French toast sticks coated with delicious cinnamon sugar, but they’re also made with pumpkin! Did you know that French toast doesn’t really have French origins? The first time a “French toast” recipe was written down was in the “Apicius,” which was a Roman cookbook! And the recipe in that book was the same basic French toast recipe we still use today, except they served their toast with honey instead of syrup.
Pumpkin French Toast Sticks
These delicious pumpkin French toast sticks will make your fall breakfasts special! And they’re quick to whip up, so they’re a good breakfast for busy school day mornings, too!
Ingredients
1 loaf french bread, slightly stale (if your bread is too fresh, cut it into 1″ slices then dry it in the oven at 275°F for 8 minutes)
2-4 Tbsp. butter
4 eggs
2/3 cups milk
1/2 cup pumpkin puree
1/2 Tbsp. vanilla extract
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice*
Cinnamon Sugar Coating
1/2 cup sugar
1 Tbsp. cinnamon
* Make your own DIY pumpkin pie spice by mixing:
3 Tbs. of ground cinnamon
3 tsp. of nutmeg
2 tsp. of ground ginger
1 tsp. of ground allspice
1 tsp. of ground cloves
Directions
1. Cut the bread into 1″ thick slices, then cut the slices into thirds to create sticks.
2. In a bowl or baking dish whisk together the eggs, milk, pumpkin puree, vanilla, cinnamon, and pumpkin pie spice.
3. In a large skillet, melt the butter over medium heat. Dip each piece of bread into the batter making sure to coat all sides well and place into the preheated skillet. Cook for about 2 minutes on each side or until golden.
4. While the french toast sticks are cooking, mix together the sugar and cinnamon in a bowl large enough to roll the french toast sticks around in. As soon as they are done cooking, roll them around in the cinnamon sugar mixture coating all sides. Serve with homemade cinnamon syrup or maple syrup and enjoy!
