Pumpkin French Toast Sticks

For a delicious fall breakfast recipe, you have to try my pumpkin French toast sticks! They’re so easy to put together, even on busy mornings!



French Toast Sticks

  • 1 loaf french bread, slightly stale (if your bread is too fresh, cut it into 1″ slices then dry it in the oven at 275°F for 8 minutes)
  • 24 Tbsp. butter
  • 4 eggs
  • 2/3 cups milk
  • 1/2 cup pumpkin puree
  • 1/2 Tbsp. vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice*

Cinnamon Sugar Coating

  • 1/2 cup sugar
  • 1 Tbsp. cinnamon

* DIY Pumpkin Pie Spice

  • 3 Tbs. of ground cinnamon
  • 3 tsp. of nutmeg
  • 2 tsp. of ground ginger
  • 1 tsp. of ground allspice
  • 1 tsp. of ground cloves


  1. Cut the bread into 1″ thick slices, then cut the slices into thirds to create sticks.
  2. In a bowl or baking dish whisk together the eggs, milk, pumpkin puree, vanilla, cinnamon, and pumpkin pie spice.
  3. In a large skillet, melt the butter over medium heat. Dip each piece of bread into the batter making sure to coat all sides well and place into the preheated skillet. Cook for about 2 minutes on each side or until golden.
  4. While the french toast sticks are cooking, mix together the sugar and cinnamon in a bowl large enough to roll the french toast sticks around in. As soon as they are done cooking, roll them around in the cinnamon sugar mixture coating all sides. Serve with homemade cinnamon syrup or maple syrup and enjoy!
