I’m a huge fan of anything no-bake. I’m also a huge fan of candy, so you can imagine how I feel about this recipe! These are super easy to make, but so delicious you’ll want to eat the whole batch yourself! This fall, treat yourself (and you family, if there’s any left over!) to some fun Autumn Haystacks Chow Mein Candy!

Trying to get your kids more involved in the kitchen? There’s no reason they couldn’t help out with these haystacks chow mein candy! They’ll definitely have fun decorating the haystacks with the pumpkins and leaves!
If you don’t have creamy peanut butter, feel free to use chunky peanut butter instead. I’m sure a different nut butter (like almond butter) would also work well. And if you or a family member has nut allergies, I think it’d be worth a try to use an allergy-friendy substitute like Sunbutter (just double check that the other ingredients in these haystacks are safe with your allergy).
Autumn Haystacks Chow Mein Candy
Yields: 1 dozen
Ingredients
11 ounce bag butterscotch chips
3/4 cup creamy peanut butter
3 cups chow mein noodles
12 mellowcreme candy pumpkins
Autumn leaf sprinkles
Other fall/Halloween colored jimmies or nonpareil sprinkles
Directions
1. Line a large cookie sheet with wax or parchment paper and set aside.
2. Add the butterscotch chips and peanut butter to a microwave safe bowl. Microwave in 30 second increments until melted and smooth.
3. Mix in the chow mein noodles and stir until completely coated.
4. Shape into haystacks and place on the lined cookie sheet.
5. Place a candy pumpkin on the bottom of each haystack.
6. Sprinkle with autumn leaf sprinkles and any other sprinkles you want to add.
7. Allow the haystacks to “set” for 1 hour before serving. Then enjoy!
I’ve also heard of people serving these at Christmas (to represent the hay in Jesus’ manger). To make these Christmas friendly, just swap out the leaf sprinkles for Christmas colored sprinkles and swap the pumpkins out with mini marshmallows. Really, with a little bit of creativity you can customize this haystacks chow mein candy for any time of year!
