In our household, zucchinis are like bananas. We buy a whole bunch of them, and most of the time use them up before they start getting old. But sometimes we just don’t go through them fast enough, and I’m left with a couple of zucchinis that need to be used up fast. Sometimes I make stuffed zucchini boats, or add them into recipes like my veggie breakfast casserole. But sometimes that doesn’t fit in with my meal plan. But that’s why dessert breads exist! Luckily, like there’s banana bread to use up old bananas, there is zucchini bread for aging zucchinis. But unlike banana bread, where you get a nice banana taste, zucchini bread doesn’t really taste like zucchini. Which means if you have kids, this is a sneaky (but tasty!) way to get them to eat their veggies.

This chocolate chip zucchini bread does include walnuts, but feel free to leave them out if you’re allergic, or don’t like them. I just like the extra crunch they add! Also feel free to skip the vanilla glaze if you don’t want the extra sugar. It’s kind of like a sweet little garnish, so it’s totally optional.
Chocolate Chip Zucchini Bread
Ingredients
Bread
2 eggs
¼ cup of brown sugar
1 cup of white sugar
1 cup of shredded zucchini
2 teaspoons of vanilla extract
½ cup of vegetable oil
1 ½ cups of all-purpose flour
½ teaspoon of salt
½ teaspoon of baking powder
1 teaspoon of baking soda
¼ teaspoon of nutmeg
1 ½ teaspoons of cinnamon
½ cup of chopped walnuts
½ cup of semi-sweet chocolate chips
Glaze
1 cup powdered sugar
2-4 Tablespoons milk
1/4 teaspoon vanilla extract
Directions
1. Preheat oven to 350 degrees Fahrenheit.
2. In a large bowl, whisk together eggs and sugars, until smooth. Add in zucchini, vanilla, and oil. Whisk gently until combined.
3. In a smaller bowl, add in flour, salt, baking powder, baking soda, nutmeg, and cinnamon. Gently mix together, and set aside two tablespoons of flour mixture.
4. In a small bowl, add in walnuts and chocolate chips. Coat them with the two tablespoons of flour mixture (this is to keep them from sinking in the batter).
5. Add flour mixture to the zucchini mixture, and whisk together gently (do not overmix).
6. Fold in walnuts and chocolate chips.
7. Pour mixture into a parchment lined and greased bread pan (this will make it easier to remove the finished bread). Bake for 55-60 minutes, or until a toothpick inserted comes out clean.
8. Allow to cool 10 minutes before serving. While the bread cools, mix up your glaze. Start with 2 tablespoons of milk, and add more if you want a thinner consistency. I drizzled it on the individual slices so I could get the most glaze flavor, but you could also just drizzle it on top of the whole loaf. Then enjoy your chocolate chip zucchini bread!
