I love using white candy melts! They taste similar to chocolate, but are much easier to work with, making it easy to pour them on top of the sprinkles. You can use any sprinkles you like in this recipe. I used nonpareil sprinkles in mine, but you could also use jimmies (traditional long sprinkles), or a spring sprinkle mix full of fun spring shapes! You could also include other add-ons in your bark bites other than just sprinkles. Anything that works in traditional chocolate bark would probably be good in these (as long as the add-ons fit in the molds). Try adding nuts, M&Ms, or dried fruit to make yours really unique! To keep the spring/Easter look, try to stick with add-ons that are pastel colors.
