I love cupcakes, especially when they’re made from scratch! I also love chocolate, so you can imagine how I feel about homemade chocolate cupcakes! These cupcakes would make a yummy after-school treat for the kids, or a delicious dessert for your holiday meal! If you love chocolate cupcakes too, then you have to bake these yummy Double Chocolate Strawberry Malt Cupcakes!

An added bonus to this dessert is that the frosting is homemade, too! And it uses fresh strawberries for even more delicious flavor!
Double Chocolate Strawberry Malt Cupcakes
Cupcake Ingredients:
1 3/4 C Flour
2 C Sugar
1 C Cocoa
1 1/2 TSP Baking Soda
1 1/2 TSP Baking Powder
1 TSP Salt
2 Eggs
1 C Whole Milk
1/2 C Oil
2 TSP Vanilla
1 C Boiling Water
1/2 bag of mini chocolate chips
Cupcake Directions:
1. Preheat oven to 350 degrees.
2. Line cupcake tins with paper liners.
3. Mix the flour, sugar, cocoa, baking soda, baking powder, and salt in a bowl.
4. In a separate bowl add the eggs, whole milk, oil, and vanilla.
5. Add the bowl containing the eggs, whole milk, oil, and vanilla to the bowl holding the dry ingredients.
6. Mix all together until fully incorporated, then beat for 3 minutes on medium.
7. Slowly add the boiling water starting with a small amount, then pour in the remaining boiling water. The batter may be a little runny.
8. Fold mini chocolate chips into batter.
9. Scoop batter into cupcake paper liners until 3/4 full.
10. Bake at 350 degrees for 20-25 minutes. Now would be a good time to mix up the frosting.
11. Remove from oven and allow to cool for 10 minutes. Then take cupcakes out out of cupcake pan and place on a wire rack until completely cooled. Frost with your homemade strawberry malt frosting.
Strawberry Malt Frosting Ingredients:
1 C Butter (room temperature)
4 + C Powdered sugar
3 TBSP malted milk powder
18 TBSP fresh chopped strawberries
Strawberry Malt Frosting Directions:
1. Beat butter in a medium mixing bowl on medium speed until fluffy.
2. Add malted milk powder and powdered sugar 1/2 cup at a time until blended.
3. Fold in strawberries and mix frosting further. If frosting is not creaming, add more strawberries.
4. Test to see if frosting can make and hold a stiff peak by taking a spoonful of frosting and turn the spoon upside down. If the frosting holds to the spoon, then it is ready. If not, fold in more powdered sugar.
5. Scoop the frosting into a pastry bag with a large frosting tip. Twist the open end of the pastry bag to push the frosting to the tip.
6. Begin frosting on the outside edge of the cupcake, and work inward to the center of the cupcake.
