Definitely a pantry staple if you bake a lot! I love that you can customize it by adding in berries, dried fruit, nuts, chocolate chips, whatever you like! The options are endless!

I often make chocolate chip muffins for my daughter and berry for my husband and myself all at the same time. I just add the chocolate chips & berries after I’ve poured the batter mix into the muffin pan 🙂 Plus she doesn’t like a lot of chocolate chips so I can control the amount. As always, homemade is better for you because you don’t have all those weird preservatives and food coloring added and it’s usually cheaper too!
Homemade All Purpose Muffin Mix Recipe
Ingredients:
4 C. flour
2 tsp. salt
½ C. sugar
1 ½ tbs. baking powder
½ tsp. cinnamon (optional)
Directions:
Combine the ingredients and store in an airtight container until ready to use.
Making Muffins With The Mix:
2 C. muffin mix
2 eggs
4 tbs butter, melted
¾ C. milk
¾ C. fruit small fruit/chunks or berries – your choice (optional)
#1. Preheat the oven to 400 degrees and spray a 12 count muffin tin with non-stick spray or use liners.
#2. Combine the dry ingredients with the wet and fill each muffin about ½ way full.
#3 Bake 15-17 minutes or until muffins have turned golden brown (cook times may vary depending on what you’ve added to the mix)
*Makes approximately 12 muffins. Store in an airtight container 2-3 days or freeze up to 2 months.

This homemade muffin mix would make such a cute gift – bake up some muffins, add the mix in a cute jar, put it all in a little basket (you can find a ton of these in thrift stores) or mixing bowl, maybe add a cute napkin and you have a wonderful inexpensive gift that anyone would love!
