Delicious Spring Bundt Cake Dessert Recipe.
The official first day of spring is just next week! Finally, winter will officially be over! To celebrate, welcome spring with a tasty homemade dessert. But not just any dessert will do- you’ll want to make a bright and cheery spring-themed dessert, and I have just the thing for you! These Spring Mini Bundt Cakes are easy to make, so pretty, plus, you can have a whole cake to yourself!

I never mind sharing cake, but it’s nice to have a whole mini bundt cake to yourself. It makes for a fun way to share cake with family and friends, without ever having to cut a cake!
These spring mini bundt cakes are also a lot of fun to decorate! You could easily change them to fit other seasons/holidays by just changing out the sprinkles and icing color (try bunny sprinkles for Easter). Or let the kids help and have them decorate each one differently!
Spring Mini Bundt Cakes
Cake Ingredients
Yellow cake mix of your choice (or our homemade yellow cake recipe)
Homemade icing (details below)
Flower sprinkles
Cake Directions
1. Preheat oven to 350 degrees.
2. Prepare cake mix according to package directions, or use your favorite yellow cake recipe.
3. Pour batter into a 6 cavity mini bundt cake pan, filling just over half way. You may have a little batter left. If it’s enough worth baking, you can put that in a mini cake pan or one cavity of a cupcake pan (filling the extra cavities halfway with water).
4. Bake for 21 minutes.
5. Remove from oven and cool completely. While the cake cools, prepare icing as directed, below.
6. Drizzle icing over cakes.
7. Top with flower sprinkles. Serve, and enjoy!
Homemade Icing Ingredients
1 cup powdered sugar
½ teaspoon pure vanilla extract
1 tablespoon milk
2 drops red food coloring
Homemade Icing Directions
1. Stir ingredients together in small bowl.
2. If icing is too thin, let stand for 5-10 minutes. Stir and check consistency.
