I confess, although I normally like my food made from scratch, there are two convenience items that I will happily buy! One of those items is cake mix (the other is Pillsbury Crescents)! I always have a couple of boxes of cake mix on hand and I try to stock up when I find them on a good sale. I feel like cake mix is a pantry staple (at least it is for me). My husband isn’t going to make a cake from scratch but he will whip up one using a cake mix. Anyway, all of this leads me to today’s recipe (which uses cake mix). We love these quick and easy Cherry Pie Bars!

I’ve also made this with apple pie filling and it’s just as tasty!
Easy Cherry Pie Bars
Ingredients:
- 1 box Yellow Cake Mix
- 2 cups Oats, quick cooking kind
- ¾ cup Butter, softened
- 1 can (21 ounce) Cherry Pie Filling
This literally just takes minutes to put together!
Directions:
- Pre-heat oven to 350°
In a large bowl, mix together the cake mix and the oats. Add in the butter and continue to mix until crumbly.
Grease a 9×13 pan and pour ½ of the mixture into the pan. Pat firmly into the bottom of the pan to form a crust.
Pour the cherry pie filling evenly over the top of the crust, sprinkle the remaining mixture over the top of the cherry pie filling.
Bake at 350 degrees for about 20 minutes or until slightly brown, cool, cut, and serve.

I need this recipe for Summer get togethers. Nice and easy. I also use Pillsbury pie crusts for quick pies. We still laugh in our family because my mother-in-law was famous for her pies and when no one noticed when she switched to the premade Pillsbury crust, she used them all the time!
A few years ago I bought a smal cookbook 101 things to make with cake mix. You’ve probably seen it? There was recipe just like this in it which I made not too long ago. Easy and Delish!

These look sooooo easy and fresh! I absolutely love cherries but with the price at $5 a lb for fresh cherries~ I haven’t had very many! I will have to check out the canned versions- an occasional canned treat never hurt anyone!

My dad made something similar called a ‘dump cake’ but his didn’t have oats and was messy where you weren’t able to cut into squares – they are amazing! and your recipe results in a much nicer display. 🙂 Pinning for later!

It’s tough to beat cake mix for the cost if nothing else. If you pick it up on sale, it’s cheaper than scratch, especially if you are doing a flavor.
