Cookie bars are delicious at any time of year, but they’re especially fun to make for Christmas if you give them red and green add-ins! This quick and easy homemade cookie bar recipe makes a great winter break treat, Christmas dessert, or even a wonderful homemade food gift! I love regular cookies, but sometimes I don’t want to take the time to form the individual cookies. Cookie bars are a great way to get the cookie taste you love, but with less prep time! Plus, they’re super easy to whip up. If the kids are home on winter break, have them help out!
These would also make a delicious Christmas food gift. Just brake this apart into neat bars once it’s cool, and put a couple of bars into a cellophane treat bag. Put them in a Mason jar or gift box to keep them extra safe until delivered to your gift recipient.
Chocolate Chip Christmas Cookie Bars
Ingredients
2 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
10 tablespoons butter, melted and cooled
1 cup brown sugar
½ cup white sugar
1 egg
2 teaspoons vanilla extract
1 cup semisweet chocolate chips
1 cup holiday M&M candies
Instructions
1. Preheat oven to 325 degrees. Prepare a 9 x 13″ edged baking pan with nonstick cooking spray.
2. In a medium mixing bowl, whisk together flour, baking soda, and salt. Set aside.
3. In a stand mixer (or in a different bowl with a hand mixer) combine the melted butter, brown sugar, and white sugar until well blended and fluffy. Add the egg and vanilla.
4. Slowly add the flour mixture until completely blended.
5. Stir in chocolate chips and about half the M&M candies.
6. Press the dough into the baking pan and press remaining M&M candies into the top of the dough.
7. Bake for 25 to 30 minutes or until the middle is set and the edges are lightly browned. Cool completely before slicing.
