Easy Cheesy Potato Chowder to Warm You Up.
There are tons of reasons why I love to eat soup in the cooler months. For one, it’s a great way to fill up without eating something heavy. Soup warms you up when you’ve been super cold and need to get rid of the chill. Plus, it just tastes so good and I can easily eat it for lunch or dinner. I could go on and on about all the reasons why soups, stews, and chowders are my top choices when it’s cold. If you have a friend that recently had a baby or someone new has moved into the neighborhood, making some hot cheesy potato chowder is a great way to let them know you are thinking of them. Plus, who wouldn’t be happy to have someone else cook supper for them? I always welcome food!
I have mentioned that I eat a lot of soup in the winter months, but honestly, this chowder is perfect at any time of year. It’s just so filling and simple to make that once in a while I just start craving it even when it’s hot outside.
Delicious Cheesy Potato Chowder Recipe
Ingredients
1 Tablespoon butter or olive oil
1-1/2 teaspoon chopped garlic
1 cup celery, diced
½ cup chopped yellow onion
8 medium potatoes, baked and diced (peels on or off depending on preference)
3 cup chicken broth – divided into 1 cup and 2 cup (if you use a low sodium variety, you may need to add salt to taste)
½ teaspoon black pepper
1/3 cup all-purpose flour
4 oz. cream cheese
1 Tablespoon dried parsley or ½ cup fresh
2 cup whole milk
2 cup shredded cheddar cheese
1 cup frozen or canned corn
6 pieces bacon, fried crispy
Directions
1. Heat butter/oil in a large stockpot over low heat.
2. Add garlic, celery, and onion. Saute until softened and translucent.
3. Add potatoes, 1 c. broth, parsley, salt, and pepper. Cook 10 min. over med. Heat.
4. Mix softened cream cheese, flour, milk and remaining 2 c. broth by hand mixer or whisk until smooth. Add to the stockpot and continue cooking over med. Heat, stirring frequently until heated through and thickened.
5. Add shredded cheese and corn. Stir well to mix in. Let simmer until cheese is melted.
6. Pour into serving bowls and top with bacon crumbles. Top with additional cheese if desired.
7. Optional – A dash of red hot sauce, stirred in adds an extra punch. Enjoy!
