I try to eat healthy for the most part but must admit to loving a few really unhealthy treats. Yes, I am one of those people that cuts up refrigerator biscuits, fries them in oil and dusts them with sugar and calls them donuts. I also love that old fashioned sticky treat – monkey bread – made from frozen white bread (some people use refrigerator dinner rolls). Did you grow up eating this too? Anyway, here’s my fall take on my favorite treat – pumpkin spice monkey bread!

I know I could at least make my own bread dough and skip the preservatives but don’t. I could even make whole wheat monkey bread, but don’t see the point.
Anyway, since it’s finally fall here in Atlanta, I’m in the mood to bake. I love to bake goodies and am so happy I can finally heat up my kitchen all I want! I made Pumpkin Spice Monkey Bread over the weekend. It was delicious, but didn’t taste like pumpkin. Usually I use cinnamon but when I think of fall I think “pumpkin” so I thought pumpkin pie spice instead of cinnamon. It smelled soooo good while baking!
Here’s the recipe for Monkey Bread aka Pull Apart Bread/Bubble Loaf/Pinch Me Cake.
1 loaf frozen bead dough thawed
1/2 – 3/4 stick butter melted
3/4 cup brown sugar
2 tsp cinnamon or pumpkin pie spice
Pre- heat oven to 350.
Cut the thawed loaf in half length wise and then again until you have about 20 or so little pieces. Mix the cinnamon/pumpkin spice with brown sugar in a separate container. Dip each piece of dough into the melted butter and then roll in the spice/sugar mix. Layer in a a greased bundt/loaf pan. Cover and let rise until double 1-2 hours. Bake at 350 for about 20-25 min. Carefully flip on to a plate.
Use cinnamon or pumpkin spice it doesn’t really matter. All I really want is the sticky caramel flavor anyway :)!

We all deserve some unhealthy treats once in a while. I haven’t had monkey bread in ages but it looks so good, I’m afraid I would find a corner and eat the whole thing and then be filled with regret. (Why can’t I just skip to the regret and not eat the calories!?) Anyway, I know what you mean. As soon as the weather cools all we can think of is baking. After a summer in the hight 90’s and salad after salad, the scent of spice and the warmth of the kitchen is so welcome I can’t seem to stop making good things. I am giving away as much as possible, lol.

We have the whole family over for brunch on Easter and Christmas and I always fix monkey bread.
Now I’v taught my grandkids how to make it. I love the thought of passing down family food traditions.
The variations on the basic M.bread sounds wonderful, I’l have to try it.

My mother used to make this but she called it “Cinnamon Crown”. She prided herself on being fancy so no Monkey Bread for her! She would make a batch of her yeast roll dough for the bread part and then the rest was similar to your recipe. It was always a hit. Thanks for triggering the memory!

Monkey bread was commonplace in my home when my sons were growing up … it’s piping hot deliciousness awaited them nearly every day when they got off the schoolbus. I can see them now, racing up the hill yelling …. “Monkeybread!” As adults they told me they could smell it as soon as the busdriver opened the door … that’s for posting this … I hadn’t thought about that it a while & it made me smile! 🙂
