This recipe is great to take to a bbq, picnic, or other summer gathering! Everyone is sure to love it, and it also happens to naturally be vegan and gluten-free! If you like your salsa spicy, consider adding diced chilies, jalapeños, or a dash of Tabasco sauce.
Quick and Easy Black Bean Salsa
Ingredients:
15 ounces Black Beans (rinsed and drained)
2 cups whole Kernel Corn (frozen or canned)
1 large Tomato, diced
1 small Onion, diced to be the same size or smaller than the diced tomato
2 Tablespoons Lime Juice
Cilantro or Parsley Leaves (optional)
Salt and Pepper to taste
Directions:
1. If using frozen corn, make sure to thaw it first. All the ingredients should be at room temperature.
2. In a large bowl, gently mix all of the ingredients together.
3. Chill the mixture, or serve it at room temperature. It can be served with tortilla chips as a salsa, or used to top cooked chicken or other meals you want a fresh, healthy topping on!
This quick and easy black bean salsa is even better the next day, after the flavors get a chance to mingle together. So if you can, try preparing this a day ahead. It’s easily transported to gatherings in a bowl or plastic container, and would also look really pretty in a Mason jar!
