I love no bake recipes! They’re perfect for when I’m in the mood for a treat, but don’t feel like having to check on the oven every 10 minutes. Which is why I love chocolate bark! Some bark recipes are complex, requiring a lot of stirring and careful melting, but not this one. This chocolate bark is quick and easy to put together, only requiring a microwave and your fridge. If you want a simple chocolaty treat, you have to make this Pistachio Cranberry Chocolate Bark!

Food always makes a great gift, especially around the holidays! If you need a last minute present, make a big batch of this pistachio cranberry chocolate bark. Then break it up and package the pieces in some clear plastic treat bags tied closed with a pretty ribbon. The end result is a quick, pretty, and delicious gift! This would also be a lovely dessert to bring to a party!
Pistachio Cranberry Chocolate Bark
Ingredients
1.5 cups semi-sweet chocolate chips
3/4 cup white chocolate chips
1/4 cup pistachios
2-3 tablespoons dried cranberries
Instructions
1. Line a large baking sheet with wax paper and set aside.
2. Add the semi-sweet chocolate chips to a microwave-safe bowl. Cook on high for 20 seconds, stir and repeat until the chocolate is melted and smooth. Be sure to cook in 20 seconds intervals to prevent the chocolate from scorching.
3. Pour the chocolate onto your prepared pan and smooth it out to about 1/4″ thick. If you like a thicker bark, just don’t spread it out as much.
4. Now melt the white chocolate exactly the same way and place spoonfuls on top of the semi-sweet chocolate.
5. Use the end of a chopstick or the tip of a butter knife to make swirls through both chocolates. Just go around the pan, dragging the tip through the white chocolate in a circular motion. You can make this as swirled as you like. Just continue making large and small circular motions until it looks the way you like.
6. Immediately sprinkle the pistachios and cranberries all over the top of the chocolate.
7. Refrigerate until set, which was about 45 minutes for me. If you make a thicker bark, it will take a bit longer.
8. Break or cut into random sized pieces and enjoy!
This pistachio cranberry chocolate bark will keep for about a week, if it lasts that long!
