Homemade Peanut Butter Buckeye Candy

Ingredients

  • 1 cup peanut butter
  • 2 cups powdered sugar
  • ¼ cup butter, softened
  • 1 tsp. vanilla
  • 8 oz semi-sweet chocolate chips

Instructions

  1. In the bowl of your stand mixer combine peanut butter, powdered sugar, vanilla, and butter until well combined. Mixture will be a bit crumbly.
  2. Scoop out a small amount of mixture and roll into a 1 ½” balls.
  3. Place in refrigerator to firm up for 1 hour.
  4. Now you can do your chocolate dip one of two ways- melt in the small slow cooker over low heat, stirring occasionally.
  5. If you want to melt in the microwave- heat for 30 seconds at a time, stirring each time until smooth.
  6. Gently push toothpick into center of peanut butter ball until a little more than halfway in.
  7. Dip in melted chocolate and roll to coat leaving just a small portion uncovered at the top.
  8. Place on waxed paper and allow to set until chocolate has hardened.
  9. Keep in refrigerator and remove to soften a few minutes before serving ( I eat mine straight out of fridge cold-yum!)
