So I always make a breakfast that I can either make the night before, like a breakfast casserole, or one that’s easy to put together Christmas morning. Yum, I love me a breakfast casserole. On Christmas morning we have a super easy (though not particularly healthy) breakfast casserole made of layer of crescent rolls, sausage, eggs and cheese, along with yogurt parfaits or sundaes of vanilla and honey flavored yogurt, fresh and dried fruits, nuts, and granola topping.
When the girls were young they would get pop tarts in their Christmas stockings, which they thought were a really special treat since I NEVER bought them — that way they could eat those right away and I could spend an hour or so drinking my tea before working up to breakfast (I don’t like to cook or eat food until I’ve been up an hour or two, had a cup or two of tea, showered and dressed).

Oh I can’t do anything until I have at least one cup of coffee!
At least my daughter is old enough that we don’t have to get up at the crack of dawn! She used to get up before it was even light out when she was little. THAT was torture! I am not a morning person!!
Stephanie @ La Dolce Vita says
Yum! it all looks delicious! I have a tray of Pioneer Woman’s cinnamon rolls in the freezer ready to go. Can’t wait! Merry Christmas!

Thanks for sharing! I love breakfast casseroles. Usually make one on Sunday mornings. have a Merry Christmas
Kathy @ Creative Home Expressions says
I’m doing either French toast or the cinnamon rolls, Manuela. I want easy, too, as I have a few things to get prepped before we head over to my daughter’s on Christmas. If I do the French toast I can do my gluten free bread for me, but I can’t have the cinnamon rolls.
Lori says
I usually make my breakfast casserole or sometimes just muffins; it depends on how excited about Christmas I am. ~ Merry Christmas!~
Sandra @Beneath this Roof, Within these Walls says
I make a special apple-filled bread for Christmas morning. It is a flakey yeast dough, simliar to croissant or strudel dough, filled with an apple-date filling, braided, baked, and decorated with candied red and green cherries.
The potato-cheese casserole is a family favorite, one we always have for special dinners, absolutely delicious.
Manuela says
That sounds amazing!!
I actually make the potato cheese casserole for Christmas Eve dinner and then I just re-heat it the next day. I always think it’s better the next day.

My family loves canned cinnamon and orange rolls and either sausage balls or Lil smokie beef sausages. This was a huge splurge when we had five kids and were scratching by. I’ve tried to change the menu many times but talk about revolt! My husband is as bad as the kids! And this breakfast menu is not just for Christmas but also for New Year’s, Easter, Fourth of July, Thanksgiving too, lol. I thought at Thanksgiving we could get by without it, but I’ll be sure not to try and pull that off again lol. Oh the disappointment. And I can’t tell you how many times I’ve been asked about the breakfast menu since Thanksgiving. Even this evening I had to reassure my youngest that yes indeed we were having the ‘traditional’ breakfast. Then John called from work to see if he needed to find an open grocery to pick up our Christmas breakfast. Looks like I’m stuck with this menu until the end of time, lol.

Oh I think those snowmen are darling. Since I just learned yesterday that “the crew” will be arriving for Christmas breakfast and staying all day, this is timely help. Thank you, Manuela!
Deanna says
I am definitely going to make those enchiladas!
I prefer some protein in the morning, so I usually do some eggs, bacon and cheese!
Merry Christmas!

The apple oatmeal casserole looks great to me. The snowman pancakes are very cute, though when I do anything cute with food for my boys, they think I’ve lost it now that they are 14 and 17. Happy holidays! Tammy
Cindy says
I love the breakfast casserole, but my husband doesn’t, so we have cinnamon rolls (a treat for us) and scrambled eggs and bacon. He makes it so I can’t complain!

Another great collection of ideas Manuela! Most of them are off of my “can~eat” list but they ALL look amazing. I do have to say that the breakfast Enchiladas look DELICIOUS and I’ve never heard of them before! I’ve put them on my must~make list! I always get the best ideas from your blog!!!(Peppers and eggs are a staple in my breakfast diet now, thanks to you!)
It’s so smart to think ahead like this for Christmas breakfast. When the kids were little it was one of the rare times they were allowed to eat candy before breakfast (from their stockings) so I needed a protein filled meal right after or chaos would ensue! Usually that entailed a simple meal of scrambled egg with melted cheddar cheese on top (sometimes baked), fruit (usually orange slices and a melon of some kind). As a nod to the holiday, sometimes I’d put together a pull~apart cinnamon~monkey bread thing-y made from cut-up (unbaked) refrigerator biscuits, generous amounts of cinnamon sugar and melted butter all tossed together and then pressed into a well greased Bundt (TM) pan and baked at 350 for 20-30 minutes! I would only make this occasionally so the kids really appreciated it! I think that’s one of the secrets to making the meals more special for children (and grown ups 😉 )… serving things they don’t usually get to eat hahahah! Oops…sorry to ramble on!
Wishing you and your family a lovely holiday my kind friend!
Love,
Tracey

Every year for Christmas morning breakfast, I’ve made a egg and sausage casserole similar to yours. But this year my hubby has to work Christmas day, so it’ll just be me and our young adult son on Christmas morning. 🙁
Those breakfast enchiladas are different and look very yummy. I think I’ll make those. Hubby can have leftovers on the 26th cuz he’ll be home that day. 🙂
