Spring has sprung here! While the official first day of spring isn’t until March 20th, I don’t think the flowers know that! It’s starting to look so cheerful outside, and the weather is even warming up a bit! To celebrate the start of spring, why not make a delicious dessert, like some fun cupcakes? You could also save this recipe for Easter, but they’re so adorable you probably won’t be able to wait! Here’s how to make some Cute Spring Chick Cupcakes!

Cake mix dessert recipes like this are perfect for days when you want to bake a dessert, but don’t want to spend a ton of time. Luckily there are many different boxed cake mixes available nowadays, so you can easily find one that’s gluten free, or even organic! Choose your family’s favorite, and let it help you quickly make a batch of these adorable spring chick cupcakes!
Cute Spring Chick Cupcakes
Ingredients
Boxed lemon cake mix (the one I used called for oil, eggs, water)
16oz vanilla frosting
2 cups sweetened coconut flakes
Yellow food coloring
Orange icing tube
Candy eyes
Decorating bag
Sandwich bag
Cupcake liners
Directions
1. Preheat your oven to 350° and line a couple cupcake pans with cupcake liners.
2. Mix your cake mix with your eggs, oil, and water.
3. Fill your cupcake liners halfway with your cake batter, bake for 15 minutes, and let cool.
4. Add a drop of yellow food coloring to your can of frosting, mix well, and scoop into a decorating bag.
5. Frost a swirl onto each cupcake.
6. Scoop your coconut into a sandwich bag and add a drop of yellow food coloring, seal the bag, and use your fingers to distribute your food coloring to evenly color your coconut. Then place the yellow coconut flakes in a small bowl
7. Dip the top of each frosted cupcake into your coconut flakes.
8. Now frost an upside down orange triangle onto the center of each cupcake for the beaks. Stick two candy eyes above each beak.
