Enjoy a piece of white chocolate cherry snack cake for all occasions! This delicious cherry cake is packed with flavor!

- 12 ounce bag of white chocolate chips
- 2 cups tart cherries, can use frozen
- 3⁄4 cup granulated sugar
- 3⁄4 cup brown sugar
- 2 sticks unsalted butter, at room temperature
- 4 eggs
- 1 Tbsp vanilla extract
- 2 tsp baking powder
- 3 cups all-purpose flour
- 1 cup pecans, chopped
- 9 x 13″ cake pan
Instructions
- Reserve 1/3 of the white chocolate and place the remainder in a pan with the butter. Melt the chocolate and butter together, stirring frequently.
- Line the bottom of the cake pan with parchment paper and butter it. Set aside.
- Beat sugars, eggs, and vanilla together.
- Add baking powder and flour. Mix together.
- Stir in melted chocolate and butter mixture.
- Add 2/3 of the chopped pecans and chopped cherries.
- Spread batter evenly into pan. Sprinkle with remaining chopped pecans.
- Bake at 350o for 25-30 minutes or until toothpick poked in center comes out clean.
- Let cool completely. Cut into squares. Enjoy!
