- –Banana Bread– 1 cup all-purpose flour
- 1 cup wheat flour
- 1–1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 eggs
- 5 tablespoons butter, softened
- 1/4 cup milk
- 5 ripe bananas, mashed (I used a potato masher to make this easy)
- 1/2 cup sugar
- –Parfaits– 1 small box instant pudding (I used the French vanilla flavor, but banana cream would probably also be good!)
- 2 cups milk
- Whipped topping
- 1/4 cup finely chopped nuts (walnuts, pecans or hazelnuts)
Instructions
- –Banana Bread– Preheat oven to 350. Grease and flour a loaf pan. Set aside.
- Add flours, baking powder, baking soda and salt into a small mixing bowl and mix well. Set aside.
- In a separate mixing bowl, beat eggs, butter, milk, bananas and sugar until smooth. Stir in dry ingredients and beat just until blended.
- Pour batter into prepared pan and bake for 50-60 minutes or until toothpick inserted in the center comes out clean.
- Let cool before slicing.
- –Parfaits– Add pudding and milk together in a bowl and whisk until smooth (I used a milk frother). Refrigerate for 5 minutes until set. Remove from the refrigerator and stir.
- Slice bread into 1/2″ slices and cut those slices into 1/2″ cubes. Place a handful of bread cubes into a small trifle bowl and top with about 3 scoops of pudding. Place another handful of bread cubes on the top.
- Add whipped topping and crushed nuts to the top before serving. Enjoy!
